The Bloody X-mas Bqt

December 16th 1995 ~ At the time this happened I was the Bqt Mgr for an upscale hotel chain in NY. Christmas season in those days was more lavish with companies spending a good buck on food apps open bar, decorations etc.. this one was for a high end banking firm 400ppl.   

  Ballroom setup is going on for this xmas party & the kitchen has finished thier prep so Chef Hans per usual leaves @ 2pm goes to the strip club @ the corner drinks scotch all afternoon. The function is just about to start when he shows back up fortunately he goes in his office and passes out head back snoring his ass off door open for all to see. So he’s supposed to carve Prime Rib at one of the buffets, thats out of the question so I get my Bqt Capt Salomon suited up chefs coat, hat, tie, Chateau knife etc.. I’m directing traffic to the buffets w/ the director of catering when Chef Hans stumbles out of the kitchen into the ballroom and takes over Salomons carving station so within a few ppl of going thru the carving station Hans cuts himself deeply with the chateau knife blood on the board with the Rib ~ nightmare!!! Salomn and I change out the carving stations utensils / carving board etc…completely within 5min ~Salomons now ready to carve again except here comes Chef Hans rolling out of the kitchen hand all duct taped up, instead of going to the hospital,so he pushes Salomon aside starts carving and OF COURSE!! bleeding all over the fresh board mixing his blood with the med rare rib needless to say no one took any rib from his station and the buzz of gossip going thru the ballroom was palpable, totally overwelming my senses. Concessions to the bill were made but I don’t think we had them back after that…   Mark C ~ Got a million of ‘em
